 <title>Stuffed Mushrooms</title>

<description><![CDATA[Jon had his office Thanksgiving party today.  We made stuffed mushrooms for him to take.  They are so yummy and I want some right now!  <br />

They're really easy to make too.  I made them from memory of a recipe I saw sometime last year, last night.  Anyway, I figured I'd share the recipe from memory, too.<br />

<b>Ingredients</b><br />
1 lb pork sausage<br />
8 oz cream cheese<br />
32 oz whole mushrooms<br />
2 teaspoons of minced garlic<br />
1 tablespoon of butter<br />
<br />
And here's what you do:  Preheat your oven to 350.  Fry your sausage in a cast iron skillet.  While it's frying take the stalks off your mushrooms and cut them up into the sausage.  Make sure you have a little hollow in your mushroom cap so you can fill it in.  When the sausage is brown and mushrooms are kind of rubbery, add your garlic and then fry it all together a little more, maybe 5 minutes, maybe less.  When that's done, throw in your cream cheese and let it melt over the sausage.  <br />

When that's finished, you'll have a nice creamy meat mixture.  It tastes AWESOME on some artisan bread.<br />

Then fill your mushroom caps with the filling, dip their bottoms in the butter and line them up in a pyrex pan.  Pop them in the oven for about 30 to 40 minutes.<br />

And viola!  You have an incredibly unhealthy - but tasty- appetizer or finger food for your work party or football party or whatever.  <br />

I also think if you use just 16 oz of mushrooms and just dice them all up in the meat mixture, you can serve it with an artisan bread or in a roll and it'll make an amazing spread.  I've been contemplating selling it as a street food at our county fair in august.  I'm not sure if it'd make a good street food or not, but I might give it a try.  I think on a roll with a side of potato wedges it would rock.  You could also dice up some onions and peppers and maybe even tomatoes and cook it in and I bet it would be really good.  <br />

 <title>Job Hunt Continues</title>

<description><![CDATA[Jon and I both have interviews in Knoxville on Wednesday.  Which is very, very exciting!  I had to ask specially to have mine on Wednesday, since that is when his is and we don't really have the funds to go to Knoxville more than one time in a week.  We're looking forward to finding better paying jobs and moving to Knoxville where there are more sidewalks and you can walk places.  Yay!  Our dog is also looking forward to this, as it means he will get to spend more time with us and hopefully learn obedience and go to doggie daycare on occasion.  Our cats will hate us, but that is just a part of owning a cat.<br />
<br />
So, the spam bots are still out there and posting away.  I am getting fed up with them, but I don't know what to do about it.  I have spam protection on, but it doesn't do much good.  Frustrating!!!  I will be locking comments more often, most probably.  I think adding my link to career builder upped the numbers.  I will not do that again :(<br />

 <title>The Job Hunt</title>

<description><![CDATA[Well, it's going b etter than expected, though I haven't really had any call backs yet.  But I've applied for a bunch, so it's only a matter of time.  Most of the jobs are in Knoxville, which I think is exciting.  I want to move out of Crossville for a little while and rejuvenate.  And go to school.  And cook more interesting dishes.  I'm just ready to move, I think.  It's hard to be an adult in the place you grew up, because everyone will always t hink of you as a child a nd not t ake you seriously or think o f you as b eing capable.  It gets f rustrating and there are really only so many times you can yell that you're a grown-up before you just look a little c razy.  Anyway, stupid space bar problems are getting old.  I need a new laptop.  I am coveting a Toshiba Tecra.  I love Toshiba, even though Jon doesn't.  :)<br />

 <title>Teh Bots &apos;o Dooooooom</title>

<description><![CDATA[The spam bots are attacking my journal, so I may end up closing comments after only a few days.  Which is too bad.  But until I have better spam protection, it is preferable to combating comments about male enhancement.  <br />

Jon and I have kicked our job search into high gear.  We're doing a lot of looking in Knoxville at the moment.  Of course he's having better luck than I am.  That's typical :)   But I am having <i>some</i> luck.  So that's very inspiring.  Ideally we want to live in downtown Knoxville on Gay St. or t hereabouts, so we need jobs t hat will help us do that.  I l ove downtown Knoxville, it is super fun.  <br />
<br />
I would love to do some work for <a href="http://www.knoxvoice.com">The Knoxville Voice</a> or <a href="http://www.metropulse.com">The Metro Pulse</a>.  That would rock my world.  I also want to go back to school.  I don't especially want to go back to UT, but I really want to get my Masters.  And I think I sort of blew my whole college experience when I was there before, because my life got really weird.  I would probably enjoy it more with Jon there.  <br />

 <title>It&apos;s Raining</title>

<description><![CDATA[I am kind of enjoying the fact that it is raining.  It's all cold and wet and dreary outside and warm and bright and cheerful inside.  I like it.  I wish it w ould warm up, though, s o I could finish painting the porch.  It needs to stay up over 40 for 24 hours.  It's looking like it may warm up some next week, so hopefully I can finish the deck then.  I'm betting t he other p orches are going to have to wait until spring.  At l east t he second story ones.  Not l ooking forward to doing those, I don't like heights.  (Bah, stupid space bar is getting worse, if you couldn't tell.)  <br />

At the moment I'm waiting on Jon to get home.  I like him :)   Tomorrow I have a Dr.'s appointment a nd then I am going to do a bit of job hunting.  My goal is to get a job by the end of the year.]]></description>

<description><![CDATA[It's like 2:30 AM, and I desperately want to go to bed.  I got on a roll and wanted to finish a bit in my story, though.  My word count is at 1508, which isn't too bad, considering I lost a couple hundred words earlier due to the crappy program crashing.  And considering how long I actually spent writing (about an hour, I think.)  Maybe I will be able to do something worthwhile this month after all.  Anyway, that is all.  <title>NaNoWriMo</title>

<description><![CDATA[I have never signed up for NaNoWriMo before, but I t hought it might be fun to give i t a try this year.  Of course now I am almost a week into the month, so instead of officially signing up I am just going to write unofficially and see where I get at the end of the month.  I decided to work on a story that I already had 204 w ords done on.  That way it balanced out a little bit, since I am getting such a late s tart.  Really, I just wanted an excuse t o make me write.  (excuse all the random spaces, the bar thingy is getting w orse.)  The title of my story is The Night Market and it is YA fantasy.  Or that is the plan, things sometimes change.  So far it has a mention of Legos in it.  You know that is going to be some good readin'.  ;)  If anyone w ants to r ead it, just let me know and I will email it and you can give me some constructive criticism.  <br />

 <title>Moving?</title>

<description><![CDATA[Lately I have been thinking about moving to Cookeville or Knoxville.  I think I need to get out of Crossville for a little while.  There are no jobs here and it's run on the good ole boy system, and that is frustrating and not working for me.  If I move to Cookeville or Knoxville I could possibly work at one of the universities.  And then free tuition!  Yay!  I have been looking in both cities for employment, specifically at the colleges.  I will let you know if I find anything.]]></description>
